🏔️ Traditional Himachali Siddu Recipe – A Taste of the Mountains

When you think of Himachal Pradesh, snow-capped mountains and serene landscapes come to mind — but the local cuisine is equally unforgettable. One such delight is Siddu, a steamed wheat bun with a savory filling, often enjoyed with ghee or green chutney. This hearty dish is perfect for cold climates and full of earthy flavors that reflect the spirit of the hills.


📝 Ingredients

For the Dough:

  • 2 cups wheat flour

  • 1 tsp dry yeast

  • ½ tsp sugar

  • ½ cup warm water (for yeast)

  • A pinch of salt

  • Lukewarm water (for kneading)

For the Filling:

  • 1 cup soaked and coarsely ground split black gram (urad dal)

  • 1 tsp cumin seeds

  • 1 tsp coriander seeds (crushed)

  • 1 green chili (finely chopped)

  • 1-inch ginger (grated)

  • Salt to taste

  • Fresh coriander (chopped)


👩‍🍳 Instructions

Step 1: Prepare the Dough

Activate yeast by mixing it with warm water and sugar. Let it sit for 10–15 minutes until frothy. Now mix the flour and salt, and gradually add the yeast mixture and lukewarm water to form a soft dough. Cover and let it rise for 1–2 hours.

Step 2: Make the Filling

Mix ground urad dal with chopped green chili, cumin, coriander seeds, ginger, salt, and fresh coriander. Adjust spice as per taste.

Step 3: Stuff and Shape the Siddu

Once the dough has risen, divide it into equal parts. Roll each piece into a small circle, place a spoonful of filling in the center, and fold it to form a bun. Seal the edges properly.

Step 4: Steam the Siddu

Steam the stuffed buns for 15–20 minutes. They should be firm and fluffy when done.

Serve hot Siddu with a generous drizzle of desi ghee, green chutney, or even spicy tomato chutney. It also pairs beautifully with dal or curry.
